Mutton Varattiyath/Kerala Style Mutton Roast
DESCRIPTIONMutton Varattiyathu/Kerala Mutton Roast is a delicious dish suits for the occasions like Christmas,Easter etc.This dish is prepared by using a blend of garam masala with mutton and stir fry until dry roast.
HOW TO PREPARE
Wash mutton adding two pieces of Kudampuli, it helps to remove the odour .
Marinate washed mutton pieces adding ginger, garlic paste,keep aside for half an hour.
Cook this mutton in a medium flame for 40 minutes.Or else you could pressure cook mutton for 4 to 5 whistles.
Switch off the fire when its cooked properly and keep aside.
Heat oil in a pan ,add garam masala to this and saute for 2 minutes.
Add mustard seeds, let it crackles.Add in curry leaves,shallots,onion,ginger ,garlic and saute well until onion turns brown in colour.
Add green chilly ,tomato to this and saute well till tomatoes becomes soft and mushy.
Now,add all masala powders to this and saute for two minutes in a low flame.
Add required water ,salt and let it boil.
Add mutton pieces to this and mix well and bring down the flame to low. Stir in between.till mutton is dry and masala get coated with mutton pieces.
You can drizzle oil in between.Kerala Mutton roast is ready.serve hot with Chappathi ,Rice etc.
You should add chilly powder before adding tomato pieces.
Avoid shallots if you don’t have it,add more onion instead of that.
Adjust the amount of chilly powder according to your tolerance.
