Nadan Egg Curry
DESCRIPTIONNadan Egg Curry/Nadan Mutta Curry- Appam and Egg curry is one of the favourite breakfast dish of Keralites. Thengha Aracha Mutta Curry/Egg Curry in ground Coconut is a tasty dish which can be prepared with eggs are cooked in base of ground coconut gravy .Egg curry is the most easiest dish to prepare as a side dish for breakfast.Do try this and enjoy with your family.
HOW TO PREPARE
Deshell the boiled eggs,cut into half and keep aside.
In a mixer jar,add grated coconut,coriander powder,chilly powder and fennel power.
Grind this into a fine paste adding required water and keep aside.
Heat oil in a pan,add ginger,garlic,onion and saute well .Don’t forget to add salt while sauteing onion.
Add in green chilly, potato pieces to this and saute for 2 minutes.Add turmeric powder and saute for a minute.Add half to 1 cup water to this and mix well with the ingredients.
Cover it with a lid and cook in a medium flame till potatoes cooked well.
Now bring down the flame to low,add ground coconut paste to this and let it boil for 3 minutes.
Add boiled eggs to this and mix well.Allow to cook for 3 minutes more.
Switch off the flame.
Heat oil in a pan,add mustard seeds ,let it splutters.Add curry leaves,sauté well.
Season it over the curry.Thengha Aracha Mutta Curry is ready .
Serve hot with Appam,Chappathi etc.
Decrease or increase the amount of chilly according to your tolerance.
I added Perumjeerakam in this recipe,you can add garam masala as well.
