DESCRIPTIONMushroom Ularthiyathu/Kerala Mushroom Fry/Koon Ularthiyathu is a tasty dish and very easy to prepare.I love mushroom dishes,my favourite is mushroom ularthiyathu.This dish has an authentic flavour with the use of coconut oil.You could use any type of mushrooms for this preparation.This tastes same as beef fry.Do try this wonderful,finger licking dish and please your dear ones.
HOW TO PREPARE
In a bowl, take little warm water and a pinch of turmeric powder.
Soak mushrooms in this water for 5 minutes.
Wash and drain them.Slice it to small pieces and set them aside.
In a kadayi add mushrooms,chilly powder,turmeric powder salt and half of pepper powder.
Mix it well using your hands.
Turn on the flame and cook it in a medium flame for few minutes(5-7 minutes).
Do not add water.Mushrooms contains water so this will be cooked from that water itself.
Remove the lid and stir it to evaporate the water content.
Now,mushrooms will be coated with masala very well.
Don’t cook it more than five minutes,or else mushrooms will be very small when it shrinks.
Drain the mushrooms to a bowl and set it aside.
Heat oil in a pan on medium flame.
Add mustard seeds and wait till it crackles.
Add coconut bits and sauté for two minutes.
Add curry leaves,chopped onion, ginger, garlic and green chilly to this.
Saute well till the onions turns transparent.
Add cooked mushrooms to this Add salt, if required.
Stir it well to combine with the ingredients.
Add fennel powder/perumjeerakam now.
Stir in between.Drizzle coconut oil through sides of the pan if required.
Sprinkle the remaining pepper powder, one sprig of curry leaves to this.
Stir well again under a low- medium flame.
Stir in between until you get its water dry and a fry texture.
Turn off the flame now.Transfer this to a bowl.
Mushroom Ularthiyathu is ready.
Serve this with hot boiled rice.
Adjust the spiciness as per your preferences.
You could substitute pearl onion with two medium onion.
You could avoid chilly powder and use pepper powder.
You could use any types of mushrooms.
